What espresso judges look for — and what home baristas can steal
Tomorrow, 15 national champions meet in Vienna for the 2026 Julius Meinl International Barista Cup final. The espresso category is a useful reminder: crema matters, but balance, clarity and flavour matter more.
Competition coffee can get very serious very quickly. But the judging criteria point to something refreshingly simple for home baristas: stop chasing one visual cue and start judging the whole cup.
1. Crema is a clue, not the score
Judges do look at the crema and the visual presentation of the espresso. That does not mean “more crema = better espresso.” Treat crema as one signal that the shot was extracted cleanly, then taste it.

2. Balance beats intensity
The official competition description highlights balance, complexity, richness and clarity. That is useful at home because it shifts the target away from “strong” espresso. A great shot should have structure without one note crushing everything else.

3. Clarity is underrated
Can you identify sweetness, acidity and the coffee's main flavour character? If everything tastes muddy, the recipe is not helping the bean. Grind, ratio, temperature and water all affect this.

Try this on your next shot
Pull your normal recipe. Before changing anything, score it quickly from 1–5 on balance, clarity and sweetness. Then change only one variable and repeat. That is much closer to useful dialing-in than chasing a prettier puck or thicker crema.
