How a coffee grinder actually works

A grinder does more than smash beans. It meters coffee into a controlled cutting gap, moves the fragments through progressively finer cutting surfaces and gets the grounds out before the next dose arrives. Understanding that path makes adjustment, cleaning and retention much less mysterious.

Adjustment

Burr distance

The collar, dial or internal mechanism changes the relationship between the burrs. Small movement matters enormously at espresso settings.

Feed

How beans enter

A hopper keeps weight above the burrs. A single-dose workflow starts with a measured dose and tries to move all of it through with minimal exchange.

Exit path

Where grounds can stay

The chamber, declumper and chute can hold coffee. Some retained coffee is exchanged by the next dose; some remains until cleaning.

Motor

Torque, speed and duty

The motor must turn the burrs under load. Speed, gearing, cooling and intended workload are system choices, not isolated quality scores.

What a finer adjustment really changes

Turning finer reduces the available exit gap, so coffee must be cut into smaller pieces before it can leave the burr set. In espresso, those smaller changes alter how densely the puck packs and how much resistance the water encounters.

Adjustment systems can be stepped or stepless. Steps make settings easy to repeat; stepless mechanisms let you stop between marked positions. Neither guarantees good burr geometry, low retention or easy cleaning.

  • Adjust while the motor runs if your grinder manual requires it at fine settings.
  • Purge only the amount your workflow actually needs.
  • Record the useful range, not just one magic number.
  • Expect the result to shift as beans age and the room changes.

Workflow

What matters in your routine

Changing beans often makes exchange more noticeable. A stable hopper routine may care more about consistency and speed.

Geek level: zero on the dial is not necessarily burr touch

Printed numbers are reference marks, not universal particle sizes. Calibration, manufacturing tolerance, burr seating and wear change the relationship between a dial position and the physical gap.

Use the setting as a repeatable local reference. Never force a grinder finer when the burrs sound as though they are touching.
